Cinnamon Apricot Muffins

1 cup Gluten free flour                                   1 large egg

1 tsp baking powder                                       2 Tbspn canola  or melted coconut oil

3/4tsp ground cinnamon                                2 to 3 Tbsp non dairy milk or orange juice

1/4 tsp salt                                                        1/2 tsp vanilla extract

1/2 cup apricot jam                                         scant cup of honey

Preheat oven to 350 degrees. Line muffin tins if not silicone Makes 6-7 muffins

In a medium bowl whisk together the flour, baking powder, cinnamon and salt.  Set aside.

In a seperate bowl mix the jam, oil, honey, egg, oil, 2 Tbsp milk/ orange juice.

Gently fold the dry ingredients into the wet until everything is just combined. If the batter is to thick then add the extra milk. Batter should be pourable.

Bake muffins for 20-25 minutes cool for a few minutes before removing. Can be served with more apricot jam.
